Chef Dean James Max

“My love of food comes from living in Florence, Italy, my technique from working with French chefs and my understanding of what freshness is all about from growing up on a farm in Virginia.”

David McLennan

Though he has worked in the food industry from the age of 15, David MacLennan did not recognize that his passion was for cooking until after he was almost finished with an engineering degree at the University of Florida.

Working in restaurants while at UF, Maclennan realized that he wanted to pursue a different dream and entered the Johnson and Wales University culinary school in south Florida and has been advancing in the restaurant business ever since. .  Read more ...
