Shredded Turkey Leftovers
1 Julienned Carrot
1 Julienned Cucumber
1 Thin Sliced Radish
2 TB Granulated Sugar
1/2 Cup Rice Wine Vinegar
1/4 Cup Mayonnaise
1/2 TB Chili Garlic Sauce
Place the carrot, cucumber and radish in a shallow mixing bowl and toss with the sugar. Cover with the rice wine vinegar and set aside for twenty minutes. Toss every 5 minutes or so to ensure everything is pickled -- this can be done ahead of time and stored in the refrigerator for up to two days.
Stir together the mayonnaise and the chili garlic sauce.
On the baguette, place the turkey, top with the pickled vegetables, a few cilantro leaves and a nice smear of the spicy mayonnaise.
