Mixed Nut Tart

Yield: 6 people

Nut filling:
6 oz. butter
3 oz. honey
2 oz. sugar
4 oz. dark brown sugar
5 Tbsp. heavy cream
4 cups mixed nuts (whole…hazelnuts, cashews, almonds, walnuts, pecans)
 Melt the butter, honey, and sugars and bring to a boil in a small pot over a medium high heat.  When the sugars have darkened slightly after about 2 minutes, remove the pot from the stove and add in the cream and nuts.  Fill either six individual or one large pre-baked tart shell below with the mixture and bake it at 350 for 20 minutes.

10 oz. butter, softened
8 oz. light  brown sugar
1 egg
13 oz. flour
 Cream the butter and sugar with the paddle attachment.  Add the egg and combine.  Bring down the speed to low and add the flour little by little.  Refrigerate to let it firm up.  Roll out the dough and shape as demonstrated in class.  Bake at 350 degrees for 10 minutes until pale golden.

You can serve with ice cream or simply whipped cream.  The tart is great either warmed or cold.
